Frutarom Health BU has launched its new superberry ingredient formulations for confectionery products. The superberry is an all-natural ingredient sourced from Inca golden berries, the Andean physalis fruit, combining the superfruit health benefits with an exotic sweet and sour flavour.
The superberry is also rich in B-complex vitamins, protein and minerals. It is also high in vitamin C and carotenoids. Formulation challenges plaguing manufacturers usually involve stability, pH, light and temperature, but the company has found a way to obtain extracts with much higher solubility, increasing versatility and flavour and enhancing clean label application.
The ingredient can and has been used prevalently in sugar confectionery, gummies/jellies, hard candy and chocolate blocks
