China is experiencing strong growth for dairy alternative drinks, with a CAGR of 18.7 percent, to reach US$6.7 billion, according to Innova Market Insights.
Lampados has launched Liteez, a new sweetener delivery system. The vegan meringue “kiss” is a plant-based snack—free from allergens such as eggs, gluten, lactose, or nuts, and contains only six ingredients.
Liteez uses a vegetable protein that has the ability to foam like eggs to help create the desired kiss texture and form.
Sugar’s functionality is replaced with prebiotic fibres to form a stable foam and maintain the “kiss” shape, while being highly soluble in hot drinks, such as coffee or tea. Two Liteez “kisses” contain about two calories instead of 20 calories in one teaspoon of table sugar.
To cater to increasing consumer demands for less meat and meat-free options, plant meat foods need to get more realistic, such as with the ‘plant blood’ by impossible foods. Henk Hoogenkamp addresses the flexitarian trend and recent developments with meat-free food.
