The fourth type of chocolate to be created—Ruby Chocolate—that was developed by Barry Callebaut has an intense taste and a natural, distinctive pinkish colour without the use of berries or food colouring. The new chocolate has a berry-fruity flavour and does not taste bitter.

The ruby cocoa beans used to produce the chocolate are sourced from different regions of the world—such as from countries like the Ivory Coast, Ecuador and Brazil. The pinkish hue of the chocolate has an indulgent appeal to consumers.
